Jerk “chicken” is an awesome dinner to brighten up an otherwise dull weeknight.  It is quick and easy and when served with some mango salsa, tastes of the summer!  The rub for the jerk chicken is so easy to make on the spot or can be frozen to have ready for a quick and easy diner.

 

It is as simple as blending together some ingredients, which are listed below!  This recipe will make enough rub for two meals for 4 people.

Jerk Rub Ingredients

4 x spring onions

1 x inch ginger

4 x cloves garlic

2/3 x chillies (depending on how spicy you like it!)

2 x teaspoons thyme

2 x teaspoons allspice

1/2 x teaspoon cinnamon

3 x tablespoons soy sauce

1 x tablespoon brown sugar

juice of 1 lime

 

Mango Salsa Ingredients

1 x mango

1 x tomato

1 x red chilli

1/2 x red pepper

1/2 x red onion

juice of 1 lime

 

Method

Place all ingredients for the rub in a blender and blend to a smooth paste, it should take 3-5 minutes.

Coat whichever “chicken” fillet you are using in the rub and leave to marinade for at least an hour.  I use the Quorn vegan fillets.

Cook the fillets in the oven for 20 minutes.

While the “chicken” cooks, finely slice all the ingredients for the salsa then mix in a bowl to combine.

Serve with the mango salsa on the side.
