There really is nothing better on a dreich day than a warm bowl of soup with some tasty homemade bread.  With the weather we have been having lately this means we have been having lots of soup!  I have a load of recipes which I alternate between, but Roasted Red Pepper is the firm favorite in my house with everyone who has it agreeing.

There are loads of versions of this out there, but this is my personal fave.  It is simple and does not involve running around getting loads of ingredients, we always have them in.

 

Soup

Ingredients

2 x Red Peppers

1 x Tin Chopped Tomatoes

1 x Onion

2 x Clove Garlic

300ml of your fave stock (I use Kallo)

1 x Teaspoon Dried Chilli’s

 

Method

First put the peppers in the oven at 200 degrees.  They are ready when they are slightly charred on the outside, this takes around 25 minutes.

While they are cooking chop the onion and crush the garlic cloves into a pan and heat on a low heat for 5 minutes.  Once they are well cooked remove from the heat and set aside until the peppers are ready.

Once the peppers are roasted add them and all the other ingredients to the pan with the onions and heat over a low heat for around 30 minutes.

Blend the soup and serve.

 

We bought ourselves a bread-maker a couple of weeks ago and I am loving it.  To go with this soup I made a loaf with Oak Smoked Flour.  I had never seen it before but thought it would be good to try.  The loaf was amazing!!  I won’t give you the recipe as each bread-maker is different, but just get yourself some Oak Smoked Flour and make it to the usual instructions.  You will not be disappointed and this soup goes so so well with the bread!
