Well, I think it’s the best!  I figured I should make my first recipe post a good one, and man is this one good.  I can’t claim this for my own, but have had it for well over 10 years, so no idea where I got it!  It is super healthy and can be used for so many purposes.  I love spicy food but one of the best bits of this recipe is it can be modified for the crowd.  When it is for me I add the chilli, but if my niece and nephews are eating it I leave it out.  It is also pretty versatile to what is in the fridge.  I often don’t put in celery and double the pepper quantity instead for example.

Regardless of what you change/stick to it always seems to come out fab!  It is an absolute staple in my house and in others who have had it at mine and now have the recipe themselves. So here it is, the best enchilada sauce ever!!

 

Ingredients:

2 x cans chopped tomatoes

1/2 green pepper

1 stick celery

1/2 onion

2 x chillies

1 x tablespoon fresh parsley (although this is best can be substituted for another herb or less of dried)

1 x teaspoon dried oregano

1 x teaspoon dried basil

1/2 teaspoon coriander

1/2 teaspoon cumin

 

Method:

Put all ingredients but one can of tomatoes in a blender and blend until smooth.  Put both this blended mixture and the second can of tomatoes in a saucepan and heat for 20 mins.  And that is it!

I use the sauce on top of burritos for some extra juiciness (is that a word?!?), in chimichangas, to make enchiladas, as a sauce on nachos and even as a pasta sauce.

For tonight, this sauce is going in chimichangas.

To do this I fry up my fave veg (including loads of butternut squash cooked in the oven for 15minutes before frying) and some fake chicken pieces.  While frying add some spices, I generally chuck in some cumin, coriander, oregano and paprika. The final step is to mix this with some enchilada sauce and vegan cheese.

Put this mixture inside a tortilla and wrap tightly.  Cover it with a little oil and put it in the oven for around 15minutes until the outside is a nice golden brown.

As I love it, I also add some cheese on the top to grill for a couple of minutes before serving.

 

Serve up with a nice big salad and some homemade chips, I really do love this dish!
